04/08/2013 08:28Well, if you love sourdough as much as we do, you should really give it a go at home. The commercially made sourdoughs are good but nothing like proper artisan style breads you can make at home for a fraction of the cost. The sour essence wafting through your kitchen as the bread comes to fruition right in front of your eyes! Once you have your own starter, your well on your way to sucess, all you need to do is "feed" it weekly and the results are amazing. I have been working on perfecting this style of bread for years and I'm still not quiet there, so be patient as sourdoughs tend to have a mind of their own. Depending on the ambient temperature of your kitchen, the rise may take various times, in the winter, be prepared for things to take a bit longer, and in the summer, things speed up. One thing to know about sourdoughs is the longer it takes to rise, the more sour...so give it a go at home and try it out! There are many great formulas for starters on line for you to choose from...just make sure you are using completely clean equipment, filtered water as tap waters contain chlorine which will destroy the natural yeast critters in your dough. Yes, the process of making your starter will involve millions of wild yeast spores that help to give it lift when baking and give you that oh so delicious "sour" flavour! Again, be patient...be creative...and be hungry!
