"Twisted Caesar"
05/08/2013 13:37There's something very, very delicious lurking out there....it's my version of a Caesar, and not a salad....I am a huge fan of a nice, salty, spicy Caesar that cools you down and sets your tastebuds a blaze. My twist on this classic involves a multi-ethnic course of action...a bit of classic Russia, a swoop to Japan and a cruise over to Korea on the way to your chilled glass...sound good? Yup! Start with all your classic Caesar fixings....Smirnoff Vodka, spicy clamato, my "fire salt" ( see chef tips => Finishing Salts ) wasabi paste, freshly ground pepper and last but not least, Kim chi sauce! The Kim chi sauce can be found at any asian inspired food store, or sometimes your favorite ethnic aisle in your local grocery store. Kim chi sauce is basically the foundation for making Kim chi the "fast way"...this is a traditionally super spicy cabbage based dish which is allowed to ferment per say, one of my all time favs! So here we go, in a super chilled glass, preferably right out of the freezer, add wasabi, kim chi sauce, "fire salt" and however much vodka you wish ;) mix it up so you don't end up with a mouthful of wasabi and end up in the clinic...lol...now crack some fresh pepper, add clamato...stir....garnish with a wedge of lime or a spicy pickled bean...and sip away!
